Cabbage soupSimple, Wonderful Cabbage Soup


8½ cups vegetable broth or water/divided

1 small onion, diced  

3 cloves garlic, smashed or diced

2 carrots, diced

1 small head green or red cabbage, sliced thin and into an easily-eaten-with-a-spoon-size

1 can tomatoes, stewed or regular and sliced, reserving liquid

1 teaspoon salt (or to taste)

½ teaspoon pepper (or to taste)

In a large stockpot, heat ½ cup of the vegetable broth or water til it starts to sizzle. Add the carrots and let them cook for 2 minutes. Then add the onions and let them cook for 3 minutes, stirring intermittently. Adjust the heat along the way if it seems too high or too low. Add the garlic, cabbage and tomatoes with their liquid and let them cook together for 3 more minutes, stirring constantly. Finally add the 8 cups of vegetable stock or water. Add a pinch of salt and some pepper and give one last good stir. Cover and let cook for 20 minutes on medium low heat, so that the soup is just simmering. Stir this soup occasionally while it is simmering on your stovetop.

At the end of 20 minutes, taste this soup and decide how much salt and pepper you need to add. Do it!! Don’t be shy this is YOUR soup! Some delicious add-ins are: beans, mustard, any other chopped vegetable, tofu, seaweed, cilantro, lemon juice, noodles… you decide.

This is so healthy and did you notice that we didn’t use any added fat? Fat is NOT bad, but if you are looking to cut back, feel a little lighter, doing a detox, this soup is a super healthy way to have a meal that will give you energy, make you all warm and cozy, but leave you feeling light.
